First, it’s about ambience: I love reading and writing at local cafes. The dilemma for me is choice of beverage, which of course must complement the ambience especially when it’s hot outside. When the heat and humidity descend, there’s always the option of iced tea or iced coffee ­– functional and appropriate but, honestly, somewhat boring. Unless, in my case, the iced coffee contains sweetened condensed milk, which most cafes do not offer. Which leaves me dissatisfied and still searching.

That’s why I propose that all establishments offer lemonade — made with real lemons — not some bottled version. The best house-made lemonade I ever had can be found at The Majestic, a restaurant located in Old Town, Alexandria. Just thinking about a glass of the stuff makes my mouth water.

Thankfully, The Majestic kindly offered me their recipe. With the addition of club soda, their version is just how I like it – sweet, fizzy and refreshing. If the result is too sweet for you, just add a touch more club soda. Enjoy!

The Majestic’s lemonade recipe

Per pint glass:

• Juice of 1/2 lemon
• 4 tsp. granulated sugar
• 2 ounces lemonade base (1 part water, 1 part lemon juice, 1 part simple syrup). * Can make this ahead of time to have on hand. Simple syrup is equal parts water to granulated sugar, boiled to melt and combine.

Shake or stir these ingredients to dissolve and combine. Add ice and top with club soda. Shake well to combine. Enjoy with lemon wedge.
